Aloha Cookies

We are still pretty sad about having to cancel our Hawaii trip, so anything we can get a little island flavor we take full advantage! These aloha cookies are a concoction my mother in law experimented with. It has pineapple, coconut and macadamia nuts in them, if that does scream tropical, I don't know what does!


Ingredients:

1 pkg Pineapple Cake Mix

2 Eggs

1/2 cup Vegetable Oil

1/2 cup Macadamia Nut, toasted

1/2 cup Shredded Coconut, toasted

1/2 cup Candied Pineapple Rings, chopped

1/2 cup White Chocolate Chips


Instructions:

  1. Preheat your oven to 350 degrees, line a cookie sheet with parchment paper and set aside.

  2. In a large mixer, add in the cake mix, eggs and oil and mix well.

  3. Add in the macadamia nut, shredded coconut, candied pineapple rings and white chocolate chips and gently fold them all in.

  4. With a small cookie scoop, place the cookies on the cookie sheet and bake for 10 minutes and let them cool before you enjoy!
