Asian Kale Salad

Looking for a delicious, hearty and healthy lunch? Pick this one, it was delicious! The dressing was easy to make and made the house smell so good! I just love fried garlic! I devoured all huge plate of this and was super satisfied!


Ingredients:

4 cups shredded Kale, packed

1 tsp Olive Oil

2 cups shredded Purple Cabbage

2 large Carrots, peeled and grated

1 large Red Pepper, minced

1/4 cup Cilantro, minced

1/2 cup Onion, minced

2 tbsp Sesame Seeds


Dressing:

1/4 cup Olive Oil

1 tsp Sesame Oil

2 cloves Garlic, roughly minced

pinch of Salt

1 tsp Apple Cider Vinegar

1 tsp Soy Sauce

2 tsp Agave Syrup

1 tsp Red Pepper Flakes

1/2 tsp Dijon Mustard


Instructions:

  1. To make your dressing, heat a small pan over medium head with the olive oil and sesame oil.

  2. Add in the garlic and sauté for about 2 minutes. Turn the heat to low and let it simmer for about 3 minutes, remove from heat and set aside.

  3. Pour the garlic oil mixture into a mason jar, add in the rest of the ingredients, cover and shake well, set aside.

  4. Now prepare your salad, place the kale into a large mixing bowl, drizzle with the olive oil and really massage it in with your hands for about 2 minutes.

  5. Add in the rest of the salad ingredients and mix. when you are ready to serve, drizzle all of the dressing on top, toss and enjoy!
