It's yummy and light! Great for breakfast, lunch or brunch! It's just like making a regular quesadilla except you just spread on the hummus, lay the avocado and sprinkle with your favorite cheese and grill away!

Ingredients:
Tortillas
Hummus
Avocado, sliced
Queso Fresco, Fetta or Mozzarella
Butter
Instructions:
Butter one side of your tortilla and place it on a skillet.
Spread some hummus all over the tortilla, place sliced avocados and cheese on one half of the tortilla only.
Fold over the other side of the tortilla and start to grill your quesadilla, flip and grill the other side. Once both sides are golden remove to your plate, cut and sprinkle with some cheese and enjoy! You can definitely eat with some salsa, sour cream and hot sauce!
