On my journey to eating better, I made this delicious sandwich. I of course had to add bacon to it, I just can't give it up! Bacon is optional of course lol. It's creamy, and flavorful and packed with proteins. Perfect lunch!

Ingredients:
2 Avocados, mashed
5 hardboiled Eggs, diced
2 tbsp Greek Yogurt
1 tbsp Lemon Juice
2 tbsp Chives, chopped
1 tsp Mustard
Salt and Pepper to taste
Bacon, cooked
Lettuce
Sourdough Bread
Instructions:
Cut the avocados, scoop them out with a fork and mash them in a medium sized bowl, keeping some chucks in there.
Add lemon juice, yogurt, mustard, chives, salt and peer and mix thoroughly.
Peel the hardboiled eggs and dice them up and stir them into the avocado mixtures.
Toast your bread, add your avocado and egg salad, top with some bacon and lettuce and enjoy!
