Baked Potato Slices

Callin' all potato lovers! These were so good. Super easy to make and really anything with bacon is a winner in this house. We pretty much got full off of these because we ate so many of them, so beware!


Ingredients:

3 Russet Potatoes, sliced

1 tbsp Olive Oil

Salt and Pepper, to taste

2 cups Shredded Cheese, I used Mexican Blend

6 slices Bacon

1 tbsp Italian Seasoning

2 Green Onions, diced

Sour Cream


Instructions:

  1. Preheat oven to 375 degrees.

  2. Cut the potatoes into 1/2 inch slices. Use a brush to lightly coat the tops with oil. Flip and oil the other side. Season with salt and pepper.

  3. Bake on a baking sheet for 25 minutes.

  4. Cook the bacon and place them on a paper towel lined plate and set them aside to cool, then crumble to tiny pieces and leave the bacon grease for later.

  5. Remove the potato slices from the oven and lightly brush with bacon grease. Flip and brush the other side. Bake for 10 additional minutes.

  6. Decrease the heat to 350 degrees. Top the potatoes with shredded cheese and bacon. Place back in the oven until the cheese is melted, about 5 minutes.

  7. Remove the slices from the oven. Sprinkle with Italian seasoning, then top with green onions. Serve with sour cream and try not to eat them all in one sitting!
