My husband loves banana pudding, I love any type of fruit dessert. We saw this yum yum no bake cake and had to try it. I of course had to add my own flare to it with toppings, and it was SO GOOD! I highly recommend this dessert if you love bananas. The longer it sits in the fridge the better, so plan to make it the night before so you can impress everyone the next day! This was a hit with the whole family, and I will definitely being doing this often!
Ingredients:
Crust:
1 1/4 cup Nilla Wafer crumbs
3 tbsp Unsalted Butter, melted
1/4 tsp Ground Cinnamon
Cream Cheese Mixture:
1 (8 oz.) package Cream Cheese, softened
1/2 cup Confectioners' Sugar
2 cup Whipping Cream
1 tsp Vanilla Extract, divided
3 tbsp Granulated Sugar
Banana Pudding Filling:
about 20 whole Nilla Wafers
about 2 medium Bananas
1 small (3.4 oz.) package Vanilla Instant Pudding mix
1 1/2 cup cold Milk
Crumb Topping:
2 tbsp reserved Nilla Wafer crumbs (reserved from making the crust)
2 tbsp chopped Pecans
2 tbsp Coconut Flakes
Chocolate & Carmel Sauce Drizzle (optional)
Instructions:
Crush Nilla Wafers into small crumbs in a zip lock bag until fine, to make 1 and 1/4 cups crumbs.
In a bowl, combine Nilla Wafer crumbs, melted butter, and cinnamon. Set aside 2 tablespoons of crumbs for the crumb topping.
Spray your 9x9 inch pan with cooking spray and press crumb mixture into the bottom and set aside.
With an electric mixer, cream together softened cream cheese, 1/2 cup confectioners' sugar, and 1/2 teaspoon vanilla extract until smooth.
In a separate bowl, whip the whipping cream, 3 tablespoons granulated sugar, and remaining 1/2 teaspoon vanilla extract until stiff peaks form.
With a spatula, mix together whipped cream and cream cheese mixture until well combined.
Spread a little less than half the cream cheese/whipped cream mixture evenly over the crust.
Arrange the whole Nilla Wafers in a layer on top and set aside while you prepare the banana pudding filling.
In a mixing bowl, combine vanilla instant pudding powder and cold milk. Whisk until well combined and beginning to thicken.
Slice bananas into about 1/4-inch thick slices and arrange in a layer on top of the Nilla Wafer layer.
Spread the vanilla pudding top of the banana layer. Gently spread pudding evenly over the bananas, covering them completely.
Top vanilla pudding layer with the remaining cream cheese/whipped cream mixture. Gently spread it evenly over the pudding layer.
Lightly toast the coconut flakes, combine with the reserved Nilla Wafer crumbs and chopped pecans. Sprinkle evenly over the top. Cover and refrigerate overnight before serving.
