It's so sad that Taco Bell is removing all of our favorites off the menu. I just don't get it, it's the same ingredients just wrapped differently, so why get rid of it? My friend Izza asked me to try and recreate the beef quesarito, which is a burrito wrapped in a quesadilla! The first attempt was OKAY... I over cooked the quesadilla so it didn't wrap well, but the 2nd try came out great! I hope you guys enjoy, Mexican Pizza will be my next Tbell recreation.
Ingredients:
1 lbs Ground Beef
1 tsp Chili Powder
1/2 tsp Ground Cumin
1/2 tsp Paprika
Salt
Ground Black Pepper
2 cups cooked White Rice
1 tbsp Lime Juice
Cilantro, chopped
8 Burrito Flour Tortillas
Shredded Mexican Blend Cheese
Nacho Cheese Sauce
Sour Cream
Instructions:
Heat a large skillet and brown the ground beef with the chili powder, cumin, paprika and season with salt and pepper.
Take the cooked white rice and add in the lime juice with desired amount of cilantro, mix and set aside.
Make a quesadilla by taking 2 tortillas and butter one side of each tortilla. In a large skillet, place one tortilla, butter side down and sprinkle with shredded cheese, then place the other tortilla on top, butter side up. Cook until the cheese starts to melt but the tortilla is still soft, roughly 1 minute each side.
Remove the quesadilla and add the cilantro lime rice in the middle, ground beef on top of the rice, drizzle desired amount of nacho cheese and sour cream and fold like a burrito.
In a skillet on medium high heat, place the quesarito seam side down and cook until it becomes golden brown and crispy, roughly 3 mins on each side. Serve immediately with Taco Bell sauce!
