Okay so who doesn't love a good BLT? Add a fried egg and avocado with a littlie spicy mayo and you have the perfect Breakfast Sandwich!
Ingredients:
Sourdough Sliced Bread
Egg
Avocado, sliced
Bacon, cooked
Tomato, sliced
Lettuce
Mayo
Paprika
Black Pepper
Instructions:
Slice your avocado and tomato and set it aside.
Cook your bacon until crispy, line a plate with a paper towel to drain.
Heat up a frying pan and fry your egg to your preference. I like mine runny so I cooked it Sunnyside up.
Mix some mayo with some paprika. I used 2 tbsp mayo and 1/4 tsp smoked paprika. But it all depends on how much you are making. This was good for 1 sandwich.
Now assemble your sandwich. Spread the mayo on both slices of bread. Lay the lettuce down, tomato slices on top, bacon on top of that and then the avocado. Place your egg on top, sprinkle with some black pepper and enjoy!
