I love Mexican food, I could probably eat it 2 times a week easy. But with this quarantine, you can't go to the Taqueria every day! I made these yummy tacos along with a homemade salsa and Mexican street corn (elote) for Cinco de Mayo this year and they were a hit.
Ingredients:
Tacos:
Carne Asada (or any protein)
1 can of Beans
1 of each Green, Red, Yellow Bell Peppers
1 Yellow Onion
Avocados
Sour Cream
Shredded Cheese
Cilantro
Tortillas
Salsa:
1 Red Onion
1 Tomato
1-3 Jalapenos
1 bunch of Cilantro (cut of the stems)
2 garlic cloves
1 tbsp salt
28 oz El Pato Sauce
8 oz Tomato Sauce
Black Pepper to Taste
1 Lime
Elote:
Corn
Butter
Mayonnaise
Lime
Parmesan Cheese
Cayenne Pepper
Paprika
Instructions:
For the Salsa:
Cut the tomato and onion in quarters and add to a blender along with the desidred amount of jalapenos, cilantro, garlic and salt. Blend until it liquefies.
Pour the mixture into a large bowl, add in the El Pato and tomato sauce. Sprinkle black pepper and squeeze the juice of one lime and mix. The salsa gets better with each day and it gets spicier too!
For the Elote:
Boil the corn in water and a pinch of salt, approximately 10 mins
Once the corn is ready, drain the corn and spread butter and mayo all over the corn.
squeeze some lime over the corn and cover with Parmesan and sprinkle desired amount of Cayenne and paprika.
For the tacos:
cook the meat according to instructions on the packet
Slice the onions and bell peppers and saute in oil and a little sprinkle of taco seasoning until they become soft.
Warm up a can of beans with 2 tbsp of water to make it easier to spread.
Slice the avocados and and chop the cilantro.
Warm up the tortillas on the stove top and assemble!
