Cherry Limeade Cupcake

This is way too good! It's so light and fluffy, the lime jello adds a great flavor and the frosting is perfect, not too sweet, just how I like it. I want to just make these all the time! It makes a little more than a dozen if you fill with about 3/4 cups. Seriously, you have to try these, they were a hit with the fam!


Ingredients:

1 box White Cake Mix plus ingredients from box instructions (I used Duncan Hines)

1 3 oz box Lime Jello Mix

1 cup Water


Frosting:

1 cup Unsalted Butter (softened)

1 cup Powdered Sugar

1 tbsp Heavy Whipping Cream

1 tsp Cherry Extract

Red Gel Food Coloring

Maraschino Cherries and Lime for garnish


Instructions:

  1. Mix the ingredients for the cake mix, and bake according to instructions.

  2. Allow the cupcakes to cool for 10-15 minutes.

  3. Poke the cupcakes with a fork multiples times.

  4. Boil 1 cup of water in a separate pan. Dissolve the jello mix in the boiling water and spoon the jello mixture over the cupcakes evenly.

  5. Refrigerate the cupcakes until the jello is set, about a couple of hours.

  6. When the cupcakes are ready, make your frosting by creaming the butter and powder sugar in a stand mixer until it looks light and creamy, add 1 tbsp of heavy whipping cream and mix well.

  7. Add the cherry extract, stir to mix well. Add red gel food coloring and mix until well combined. Scoop the frosting into a pastry bag with a large tip and start frosting.

  8. Decorate with a small wedge of fresh lime and a maraschino cherry on the center of the cupcake.
