This is one of two Filipino dishes I've made, it's super easy and very flavorful. I love how tender the meat gets, and I love the sauce with the rice. Yummy! I'll need to learn a few more so I can share with all of you.
Ingredients:
2 lbs Chicken (skin on)
1/2 Yellow Onion, sliced
4 pieces Bay leaves, dried
6 cloves Garlic
8 tbsp Soy Sauce
4 tbsp White vinegar
1 tsp Peppercorn, whole
1/4 tsp Salt
1 tsp Sugar
3 tbsp Cooking oil
1 1/2 cups Water
Instructions:
Marinade the chicken for at least 3 hours with salt and pepper to taste, sliced onions, garlic, soy sauce and vinegar.
Heat a skillet or large pot with the oil, remove the chicken from the marinade and cook the chicken for 2 mins on each side.
Add in the rest of the marinade, including the garlic and onions, add water and bring it to a boil.
Add in the bay leaves and peppercorn, cover and continue to simmer for 30 minutes on medium heat. Continue to check and baste the meat to keep it moist and flavorful.
Taste the sauce, if you need more soy sauce or vinegar, give it an additional 1 tbsp, this depends on your preference. and continue to cook for 10 mins.
Add in the salt and sugar, mix well and serve hot!
