Looking for a nice finger food to serve? These are easy to make and super yummy! I used both regular and spinach tortillas and they were equally good. I wanted to added a little bit of color! These are a perfect brunch item, or if you are having a get together, since it makes a lot and easy to grab and socialize.
Ingredients:
2 cups shredded Chicken
1 ripe Avocado, mashed
2 tbsp Plain Greek Yogurt
1 tbsp Lime Juice
2 tbsp Red Onion, finely diced
2 Green Onion, sliced
Black Pepper to taste
1/4 tsp Salt
1/2 tsp Garlic Powder
2 tbsp fresh Cilantro an Parsley, chopped
1/2 cup Shredded Cheese, your choice
4–6 Tortillas (plain or spinach)
Instructions:
In a large bowl combine all ingredients for Chicken Avocado salad. Stir until well mixed.
Spread the mixture over tortilla and roll up tightly. Repeat with remaining salad.
Slice with a knife into 1/2 inch slices and enjoy!
