I was looking for some more healthy but yummy lunch ideas and came across this one. I tweaked it a little to get some extra flavor and I think they came out so good! They are so filling too!
Ingredients:
4 pieces of Naan bread (I used the garlic naan from Trader Joe's)
1 cup of Roasted Red Pepper Hummus
4 cups of Organic Spring Mix
3 cups of shredded cooked Chicken (I used left over rotisserie chicken)
4 tbsp Feta Cheese
1/2 cup of Cucumber, peeled, sliced & quartered
1 cup of Cherry Tomatoes, quartered
1/2 cup of Red Onion, diced
Red Wine Vinaigrette:
1/4 cup of Extra Virgin olive oil
1/4 cup of Red Wine Vinegar
1/2 tsp of Dijon Mustard
2 tsp Raw Honey
2 tsp of Green Onion, minced
Sea Salt, to taste
Black pepper, to taste
Instructions:
Cook your naan to package instructions.
In the meantime, make your veggie mix by combining the cucumber, cherry tomatoes and red onions in a medium sized bowl.
Mix all the ingredients of the red wine vinaigrette and whisk until fully combined. Coat the veggie mix with the vinaigrette, saving some to drizzle on your wrap.
Once the naan is finished, spread the hummus on top and start to assemble your wrap with the spring mix, chicken, the veggie mix and the feta cheese. Drizzle some of the vinaigrette on top fold and enjoy!
