This is a copy cat of the PF Chang's lettuce wraps. They come pretty close! It's perfect when you want a nice light lunch, I had 4 of them and they filled me up. And I felt like I was being healthy!
Ingredients:
1 tbsp Olive Oil
1 lb ground Chicken
4 cloves Garlic, minced
1 Onion, diced
1/4 cup Hoisin Sauce
2 tbsp Soy Sauce
1 tbsp Rice Wine Vinegar
1 tbsp freshly grated Ginger
1 tbsp Sriracha
1 (8-ounce) can whole Water Chestnuts, drained and diced
2 green onions, thinly sliced
Black pepper, to taste
1 head Lettuce (any kind would work)
Instructions:
Heat oil in a wok over medium high heat. Add ground chicken and cook until browned, about 5 minutes, making sure to break up the chicken as it cooks.
Stir in garlic, onion, hoisin sauce, soy sauce, rice wine vinegar, ginger and Sriracha until onions have become translucent, about 1-2 minutes.
Add in chestnuts and green onions until tender, about 2 minutes; season with pepper, to taste.
Spoon several tablespoons of the chicken mixture into the center of a lettuce leaf, and enjoy!
