Chicken Lettuce Wraps

This is a copy cat of the PF Chang's lettuce wraps. They come pretty close! It's perfect when you want a nice light lunch, I had 4 of them and they filled me up. And I felt like I was being healthy!

Ingredients:

1 tbsp Olive Oil

1 lb ground Chicken

4 cloves Garlic, minced

1 Onion, diced

1/4 cup Hoisin Sauce

2 tbsp Soy Sauce

1 tbsp Rice Wine Vinegar

1 tbsp freshly grated Ginger

1 tbsp Sriracha

1 (8-ounce) can whole Water Chestnuts, drained and diced

2 green onions, thinly sliced

Black pepper, to taste

1 head Lettuce (any kind would work)


Instructions:

  1. Heat oil in a wok over medium high heat. Add ground chicken and cook until browned, about 5 minutes, making sure to break up the chicken as it cooks.

  2. Stir in garlic, onion, hoisin sauce, soy sauce, rice wine vinegar, ginger and Sriracha until onions have become translucent, about 1-2 minutes.

  3. Add in chestnuts and green onions until tender, about 2 minutes; season with pepper, to taste.

  4. Spoon several tablespoons of the chicken mixture into the center of a lettuce leaf, and enjoy!
