Chicken Pasta with Avocado, Tomato and Basil

I'm really trying to eat healthier, but I can't give up noodles! But this is full of veggies and protein with a light but flavorful dressing. So I'm considering this healthy. We had left over rotisserie chicken, so this was the perfect dish to make the next day!


Ingredients:

2 cups cooked Chicken Breasts, chopped (we used rotisserie chicken)

2 Avocados, pitted and diced

1 box Rotini pasta, cooked

1/2 cup Red Onion, chopped

1 cup Cherry Tomatoes, halved

1/2 cup Fresh Basil, chopped

Salt and Pepper, to taste


Dressing:

1/2 cup White Wine Vinegar

1 tbsp Italian Seasoning

3/4 cup Extra Virgin Olive Oil

Salt and Pepper to taste


Instructions:

  1. Cook the rotini according to package, drain and set aside.

  2. In a large bowl add the pasta, chicken, avocado, onion, tomatoes and basil together.

  3. In a small bowl mix the dressing ingredients together and drizzle your pasta salad with the dressing and gently toss. Put as much or as little of the dressing as you want and enjoy!
