This is a quick and easy Chicken Pho that my mom has made me for as long as I can remember. It's the only thing that makes me feel better when I'm sick. It just clears you right up lol. This is not a legit Vietnamese Restaurant version, but hey it works, it's great in a pinch and doesn't require as many ingredients.
Ingredients:
1 Stewing Hen
28 cups of Water (or enough to cover the stewing hen)
1 tbsp Salt
48 oz Chicken Broth
2 Chicken Breast
1 Yellow Onion cut in half
1/4 cup Fish Sauce
1 bunch of Cilantro chopped
2 bunches of Green Onion chopped
1 bag of Mung Bean Sprouts
2 Lemons sliced in quarters
2 packages of Rice Noodles
Pickled Jalapenos
3 Jalapenos or more!
2 cups Water
11/2 cups Distilled White Vinegar
Fried Chili Garlic & Fried Garlic
1/2 cup of Vegetable Oil
3/4 cups Garlic minced
2/3 cups Crushed Chili Pepper
Instructions:
Use a large pot and fill with water, place the stewing hen into the water with salt and boil for 1 hour.
Add the chicken broth, chicken breast, onion and fish sauce and continue to boil.
After 15-20 minutes, pull out the chicken breast and slice. Set aside
Turn down the heat and continue to slow boil throughout the day. The longer it's stewing the better it'll taste. But at this point, it's ready to go!
Cook the rice noodles, follow the package directions and set aside. I would do 1 package first, but the broth is enough for 2 packages worth if needed.
To make the pickled jalapenos, boil 2 cups of water, add in the vinegar and bring it back to a boil. Remove from direct heat and add the jalapenos to soak until cooled. Place in a jar and keep refrigerated for future deliciousness.
To make the fried garlic and fried garlic chili, heat up the oil on medium high, add in the garlic until golden brown. Remove 3/4 of the garlic and set aside. For the remaining garlic, add in the chili pepper and stir. Remove from heat and place in a small bowl.
Assemble your Pho bowl and spice it up to your liking. I like to add: bean sprouts, green onions, cilantro, chicken breast, black pepper, white pepper, crushed red pepper, soy sauce, fish sauce, sugar, sriracha, pickled jalapeno, fried garlic, fried chili garlic and lemon!
