I love rotisserie chicken, but we never eat it all. I use the left over meat to make this awesome chicken salad sandwich. It's great on bread, croissant, crackers or over a green salad. I love this recipe because it has lots of crunch to it with the apples, almonds and celery. I always like to put some sriracha on it for that extra kick.

Ingredients:
3-4 cups of Chicken
1 cup seedless Grapes, halved
1 cup Almonds, thinly sliced
2 Celery ribs, chopped
3 Green Onions, thinly sliced
1 cup Mayonnaise
Juice of 1 Lemon
1 tbsp Dijon Mustard
1 tsp Salt
Freshly ground pepper
Olive Oil Drizzle if the chicken is a little dry
Croissant/Bread/Crackers
Instructions:
Remove the skin then pull the meat from the bones and roughly chop.
In a large bowl, mix together the chicken, grapes, almonds, celery and green onions.
Mix together the mayonnaise, lemon, mustard, salt and pepper and add to the chicken.
Cover with plastic wrap and refrigerate for at least an hour.
Add more toppings and make it your own (avocado, tomatoes etc).
