You guys are going to see a lot of soup post, it's getting cold and soup is all we are craving. I'm a sucker for a good chicken tortilla. Something about it is so comforting to me, and I'm not sure what it is! You can add any toppings you want, but I'll list what we used!
Ingredients:
1 tbsp Olive Oil
1 lb Chicken Breasts
1 Yellow Onion, diced
1 tbsp Lime Juice
2 cloves Garlic, minced
1 tbsp Chili Powder
1 tsp Cumin
1 tsp Coriander
1 tsp Paprika
1 tsp Cayenne Pepper
1/2 tsp each Salt & Pepper
1 cup Corn
1 Red Pepper, diced
1 Green Pepper, diced
1 (496mL) jar Salsa
4 cups Chicken Broth
Toppings:
Tortilla Strips
Cilantro
Lime Wedges
Avocado
Jalapenos
Sour Cream
Cheddar Cheese
Instructions:
Add all ingredients into your crock pot and cook on high for 4 hours, or on low for 8 hours.
Remove chicken breasts, shred, and add back to pot.
Serve with the toppings of your choice.
