Chillito

Here is another nostalgic treat from high school. I would eat this almost everyday. It was between cheese zombies, chillito, personal pizza with A TON of ranch dressing or a cafeteria lunch for $2.50. I was so upset when Taco Bell took this off the menu! I've been searching for the perfect recipe to recreate this, and I think I've done it! Hope you all enjoy.


Ingredients:

1 lb Ground Beef

1 Onion, diced

4 tbsp Chili Powder

1 tsp Cayenne Pepper

1 tsp Salt

2 cups Water

2 tbsp Cornstarch + 2 tbsp Water

6 oz Tomato Paste

16 oz can Refried Beans

8 oz Shredded Mexican Blend Cheese + more for topping

1/2 Red onion diced (optional)

Burrito size Tortillas

Taco Bell Sauce Packets


Instructions:

  1. In a large skillet on high heat, cook the ground beef and onions until the meat is fully cooked and the onions turn translucent. If there is a lot of oil, drain and return to the skillet.

  2. Add the chili powder, cayenne pepper and salt and stir until it's fully incorporated, add in the 2 cups of water and stir.

  3. Add 2 tbsp cornstarch and 2 tbsp water into a small bowl and stir until fully dissolved. Add the slurry into the skillet and mix well.

  4. Add in the tomato paste and stir.

  5. Add in the refried beans and make sure this is melted completely.

  6. Add the shredded cheese a handful at a time, once it's all melted, simmer on medium low for 10 mins, stir occasionally to make sure the bottom doesn't burn.

  7. Once ready, you can heat up your tortillas in the microwave for 15 secs. Add some of the chili mix, more shredded cheese and red onion, wrap and enjoy with some taco bell sauce packets for nostalgia!
