This was SO good. It's not too sweet, it's got a nice texture and the fruit we added just made it even better. You can really do anything with this, add chocolate, coconut, any fruit or just plain with some cinnamon! Great and fairly healthy dessert or snack.
Ingredients:
2/3 cup Tapioca Pearls
2 cans Coconut Milk
½ cup Agave Syrup
1/8 tsp Salt
Dash of Cinnamon
1 tsp Vanilla Extract
Instructions:
Soak the tapioca for about an hour.
Drain tapioca and place in medium, heavy bottomed sauce pan. Add milk, agave syrup, salt, and cinnamon. Mix well and heat over medium-high heat. Stir often. When bubbles begin to form, lower heat to medium. Continue stirring over heat until all the pearls are translucent.
Remove from heat, add the vanilla, stir and let it cool. The tapioca will continue to absorb and thicken as it cools, you can chill for 30 mins in the fridge before serving. We layered ours with Mango and Strawberries and it was delicious!
