Coconut Waffles

These fluffy goodness is a favorite in our family. Emily will eat 4 herself! This can be a breakfast delight or a after dinner treat, you just need to add ice cream and a chocolate drizzle. My Aunt Mollii loves it so much she has requested this for her birthday each year instead of CAKE!


Ingredients:

2 cups premix Pancake Flour

1 Egg

1 can (13.5 oz) Coconut Milk or Coconut Cream if you want it a little more rich

2 tbsp Vegetable Oil

Cooking spray for the waffle iron

1/3 cup granulated white Sugar

1/2 tsp Vanilla Extract or Coconut Extract (Extra flavor & aroma use 1/2 tsp of both)

1/3 cup shredded Coconut (optional)






Instructions:

  1. In a large bowl, mix together premix pancake flour, egg, coconut milk, vegetable oil, sugar and extract until smooth. Let batter sit for 30 minutes before cooking. Mix in shredded coconut (optional) until combined.

  2. Preheat and grease waffle iron with cooking spray.

  3. Ladle about 1/3 to 1/2 cup batter onto the preheated waffle iron. Close lid and cook. Repeat and serve immediately. Left overs are great warmed up in a toaster oven, they get nice and crispy and we love just snacking on them all day.
