Cold Soba Noodles

Cold soba noodles are a Japanese summer favorite. It's light and healthy and for someone like me who loves noodles, great on a hot day! The ponzu citrus sauce is amazing, gives it a nice flavor punch.


Ingredients:

Yamaimo Soba (Buckwheat Noodles)

Ebi Tenpura (Fried Fish Cake with Shrimp)

Red Kamaboko (Steamed Fish Cake)

2 Green Onions, chopped

4 slices of Dried Seaweed

4 inches of Ginger, grated

1/2 a Daikon, grated

Ponzu Citrus Seasoned Dressing & Sauce


Instructions:

  1. Cook the noodles according to the package. Drain and set aside.

  2. Cut the steamed fish cake and fried fish cakes with shrimp and set aside.

  3. Add the grated ginger and daikon to a desired amount of sauce roughly 1/2 cup and mix well.

  4. Add desired about of noodles into your bowl, add in the fish cakes, garnish with some green onions and dried seaweed and drizzle the sauce on top.
