Crack Noodles

These were yummy in my tummy. So much flavor in this dish. Great for a quick noodle fix when you don't have a lot of time. I almost ate the whole thing myself so you've been warned lol. I used the fresh chow fun noodles you can get at Ranch 99, you don't have to cook it, just need to separate them and it's good to go!


Ingredients:

8 oz. Rice Noodles 1 tbsp. Vegetable Oil 4 small Shallots, thinly sliced Kosher salt 1 1/2 tbsp. Sesame Oil 1/2 c. thinly sliced Green Onions, save some for garnish 4 cloves Garlic, minced 1/4 c. low-sodium Soy Sauce (make sure it's low-sodium or it will be salty) 2 tbsp. Chili Garlic Sauce 1 tbsp. packed Brown Sugar 1/2 tbsp. Lime Juice Pinch Red Pepper flakes


Instructions:

  1. Cook noodles according to package instructions and set aside, (or use the yummy fresh noodles).

  2. In a large skillet over medium-high heat, add the oil, shallots and season with salt. Cook until golden and crispy, about 5 minutes. Transfer shallots to a paper towel-lined plate.

  3. Add sesame oil to skillet. Stir in green onions and garlic and cook for one minute. Add soy sauce, chili garlic sauce, lime juice, brown sugar, and red pepper flakes. Simmer until sauce has reduced slightly, 3 to 5 minutes.

  4. Add noodles and toss. Garnish with crispy shallots and green onions. Don't forget the sriracha for the extra kick!
