Crepes with Berries

I'm not big on breakfast, I know it's the most important meal of the day, but I just don't have enough time or appetite that early. BUT I do love me some good crepes with berries. I decided to try making them and seeing if the girls would eat it. THEY LOVED IT!


Ingredients:

1 3/4 Flour sifted

2 cups Milk

2 tsp Sugar

1/2 tsp Salt

3 Eggs at room temperature

2 tbsp Butter melted and cooled + 1 tbsp for the skillet

Berries

Chocolate Syrup

Whipped Cream

Powdered Sugar


Instructions:

  1. Add the milk, sugar, salt and eggs and cooled butter into a blender and mix well.

  2. Add in the sifted flour and blend until the flour is fully incorporated.

  3. Refrigerate for at least 2 hours, this helps to have a bubble free crepe.

  4. When ready, heat a 10 inch skillet on medium high heat, and melt 1 tbsp of butter, remove any remaining butter in a small bowl and use as needed.

  5. Pour 1/4 cup of the batter into the skillet, swirl around to cover the entire bottom of the skillet. Let the batter cook until you see the edges start to brown, use a spatula to loosen and flip, then cook the other side for about 30 secs.

  6. Lay the crepe down and fill with berries, whipped cream and chocolate syrup, roll it up, and top with more berries, whipped cream, chocolate syrup and a sprinkle of powdered sugar and enjoy!
