Crispy Sesame Chicken

It's been a rough week and I haven't been able to do a lot of cooking, but tonight I was craving some sesame chicken! It's better than take out and it was so easy to make. We all enjoyed it!


Ingredients:

1 1/2 lbs boneless skinless Chicken Breasts, cut into 1 inch pieces

2 Eggs

1/2 cup Flour

1/2 cup Cornstarch

1/4 tsp Salt

1/4 tsp Black Pepper

Oil for frying


For the sauce

1 tbsp + 1tsp Sesame Oil, divided

3 cloves Garlic, minced

1/4 cup Honey

1/2 cup Soy Sauce

1/3 cup ketchup

3 tbsp Brown Sugar

1/4 cup Rice Vinegar

2 tsp Cornstarch

Sesame Seeds, for garnish

Green Onions, sliced for garnish


Instructions:

  1. In a medium shallow bowl, combine flour and cornstarch.

  2. In another bowl, whisk eggs and add salt and pepper and mix well.

  3. Coat the chicken in the egg mixture and then into the flour. Add to a large plate. Repeat with all of the chicken.

  4. In a large pot add about 3 inches of oil and heat on medium. Add chicken in batches to the oil and cook for 5 minutes or until crispy and golden brown. Remove from oil and let it drain on a paper towel lined plate.

  5. Combine the honey, soy sauce, ketchup, brown sugar, rice vinegar, 1 tsp sesame oil and cornstarch in a bowl and set aside.

  6. Heat the 1 tbsp sesame oil in a large pan over medium heat. Add garlic and sauté for about 30 seconds. Then add the sauce, bring it to a simmer, stir occasionally for about 3 minutes.

  7. Once sauce has thickened, add the crispy chicken to the pan and coat all the pieces fully with the sauce. Add sesame seeds and green onions to the top of the chicken and then serve!
