What a refreshing salad! It taste great, it felt great eating it, and I just keep wanting more. It took almost no time to make, which makes it even better. It's yummy on it's own, but you can eat it on a piece of toast too. It also looks so pretty with all of the colors!
Ingredients:
1 Cucumber, thinly sliced into half-moons
1 pint Cherry Tomatoes, halved
1 Avocado, cubed
1 small Red Onion, finely chopped
2 tbsp Fresh Parsley and Basil, Chopped
For the dressing:
3 tbsp White Balsamic Vinegar
1/4 cup Extra Virgin Olive Oil
1/2 tbsp Whole Grain Dijon Mustard
1/2 tbsp Honey
1/2 tsp Italian Seasoning
1/4 tsp Garlic Powder
Salt and Pepper to taste
Instructions:
Add all salad ingredients to a large serving bowl.
Add all the dressing ingredients together and mix well. Pour as much dressing over the salad as you like and gently toss and enjoy!
