I always have left over tacos from the night before. I feel bad letting it go bad in the fridge, so I thought I'd get creative for lunch the next day. I made these cute bite size apps and they came out great. It's the perfect amount to grab and walk around a party eating. I made plain cheese one for the girls and they loved it. Totally recommend this for any get together (after quarantine has been lifted of course).

Ingredients:
6 Tortillas
Olive Oil
Refried beans
Taco Meat (any will do)
Fajita veggie mix (bell peppers and onions)
Cheese
Sour Cream
Salsa
Jalapenos
Green Onions and Cilantro garnish
Hot Sauce
Instructions:
Spray a cupcake pan with cooking spray and preheat the oven to 350 degrees.
Cut the tortillas into 4 equal slices, and pull out all of your left overs (or make a fresh batch).
Place one piece of the tortilla into the cupcake pan and add beans and sprinkle cheese on top. Place another piece of tortilla on top and add in your meat, fajita veggies and cheese. Repeat to fill all 12 cupcake tins.
Brush the corners of the tortilla with olive oil and bake for 18 minutes.
Remove from the oven and add all of your toppings, then serve!
