This is a poor mans fried rice BUT it's delicious. It's what I grew up on, whenever we had left over rice my mom would just make it into this simple fried rice so we don't waste it. Brings me back to my childhood!
Ingredients:
3 tbsp Vegetable Oil
4 Eggs
2 cups of Rice (or more)
1 tbsp Black Soy Sauce
1/2 tbsp Soy Sauce
1/2 tsp Black Pepper
Salt for taste
Cilantro and Green Onion Garnish
Chili Garlic Sauce (optional)
Instructions:
Add the oil to a large skillet on high heat, add the eggs and scramble.
Add in your rice, and mix in with the eggs.
Add in both soy sauces, black pepper and salt and continue to stir fry until everything is well mixed.
Garnish with cilantro and green onions and add some chili garlic sauce to give you an extra kick.
