What a comforting Lao soup on this rainy day. It was so easy to make, I couldn't believe that my mom did it so fast! It's so tasty and totally recommend if you like bamboo and tomatoes.

Ingredients:
28 oz can Slender Bamboo
2 large Tomatoes, sliced
1 Jalapeno, roasted
1 14.5 oz can Chicken Broth
2 cups of Water
1/2 tbsp Fried Garlic Oil
Green Onions and Cilantro, garnish
Instructions:
Drain the bamboo shoots and cut the bottoms off if they look "old", then smash them to soften and release the juices, add to your pot.
Roast the jalapeno over your stove top until it starts to darken, slice the jalapeno and tomatoes and add it to the pot.
Pour in the chicken brothe and water and bring to a boil. Let it cook for about 20 minutes, and then add in the fried garlic.
Garnish with the green onions and cilantro and enjoy along with some jasmine rice.
