Gang Tofu

Here is another simple yet flavorful soup from Laos. It's a tomato, chicken and tofu sound. Super easy to make and ready in about 45 minutes. Perfect on cold winter days and when you aren't feeling good!


Ingredients:

1 lbs of Chicken with bones (wings, drumettes)

Water or Bone Broth

3 large Tomatoes

1 tbsp Salt

1 lbs of Tofu

1 tsp Fried Garlic

1 tbsp Soy Sauce

Black Pepper to Taste

Cilantro and Green Onion for Garnish


Instructions:

  1. In a medium sized pot, add the chicken and your desired amount of water, enough to cover the chicken, but it's all dependent on how much you want to make.

  2. Cut up the tomatoes into small chucks and add to the pot with 1 tbsp of salt.

  3. On high heat, let the water boil before reducing it to medium and let it cook for at least 30 minutes. Continue to check on your broth, giving in a stir and smashing the tomatoes each time to make sure it's releasing all the juices.

  4. After about 30 minutes, add in the fried garlic, 1 tbsp of soy sauce and black pepper. Let it boil for another 2-3 minutes and remove from heat.

  5. Serve your soup with chopped cilantro and green onions on top. We like to eat the soup with rice!
