Ghetto Chow Mein

I grew up on Mama noodles. If you went to elementary/middle school with me, you'd know I sold it for $1 a pack lol. Sometimes you just want some stir fry noodles, and since I always had this in my pantry, I decided to throw whatever veggies I had in the fridge and made a ghetto chow mein. It definitely hits the spot!


Ingredients:

4 packs of Mama Instant Noddles (pork flavor)

1 Chicken Breast

1 tbsp Oil

1 Yellow Onion Sliced

6 cloves of Garlic minced

1 head of Broccoli

2 Carrots sliced

2 stalks of Celery chopped

3 Green Onions chopped

1 tbsp Oyster Sauce

1 tbsp Fish Sauce

1 tbsp Soy Sauce

1 tsp Sugar

Salt and Pepper to taste

Juice of 1 Lemon

Crushed Red Peppers and Sriracha for additional heat


Instructions:

  1. Boil a large pot of water, add in the mama noddles and boil for a few mins until noodles are tender. Drain and set aside. Save the pork flavor and both seasoning packets for the stir fry.

  2. Cut the chicken breast into bite size pieces and stir fry for 5 minutes with 1 tbsp of oil. Drain and set aside.

  3. Take the Pork flavor packets and add it to a large skillet on high heat.

  4. Add in the sliced onion and garlic and stir fry for 1 minute.

  5. Add in the broccoli, carrots, celery, and the seasoning packets and continue to stir fry for 1-2 minutes.

  6. Add in the chicken, with the fish sauce, oyster sauce, soy sauce, sugar and stalk and pepper and continue to stir fry.

  7. Add in the noddles, green onions and lemon and mix thoroughly.

  8. Add in additional crushed peppers and sriracha for extra heat and serve!
