Ginger Garlic Noodle Soup

Looking for a super comforting and nutritious soup that can really help you when you are feeling under the weather? This is it! It takes less than 30 minutes to make and it is so yummy!


Ingredients:

2 tbsp Extra Virgin Olive Oil

3 Shallots, diced

1 bunch Green Onions, chopped, green and white divided

4 cloves Garlic, minced

2 tbsp Ginger, minced

6 cups low sodium Chicken Broth

2 whole Star Anise

2 tbsp Soy Sauce

8 oz Mushrooms, sliced

6 oz Rice Noodles

2 heads Bok Choy, roughly chopped

Sesame Seeds, Garnish

Red Pepper Flake, Garnish




Instructions:

  1. Heat 2 olive oil in a medium-sized stockpot over medium heat and add the shallots and mix well. Cook over medium heat for about 5 minutes.

  2. Chop the green onions and set aside the green part for topping. Meanwhile, finely chop the white part of each green onion.

  3. Add the white part of the green onions, minced garlic, and ginger to the shallots and mix. Cook, stirring occasionally, for 1-2 minutes or until garlic and ginger is fragrant.

  4. Pour the chicken stock into the pot and bring to a simmer. Add the star anise and soy sauce. Cover and continue to simmer for 10 minutes.

  5. While your broth is simmering, cook the rice noodles to package instructions, drain and set aside.

  6. After 10 minutes, remove and discard each star anise from the soup.

  7. Add the sliced mushrooms and bok choy to the pot and simmer for 5-8 minutes, or until the bok choy are tender. Season to taste.

  8. Prepare your bowl by placing desired amount of noodles, soup and garnish with sesame seeds, the green parts of green onions and red pepper flakes. I also added some siracha for some heat!
