While we've been in quarantine, my aunt Mollii has been staying with us. She always makes this soup that just fills the house with a comforting aroma. It is super healthy, low calories and packed with antioxidant and nutrient rich ingredients. I like to add in some rice to make it a hearty meal.
Ingredients:
A bunch of Kale
2 tbsp of dried Seaweed
14 oz Chicken Broth
14 oz Bone Broth
1 cube of Chicken Bouillon
1 Jalapeno roasted
3 inch of Ginger sliced
1 tbsp of Fish Sauce (or to taste)
1 tsp Fried Garlic
Pickled Jalapeno (optional if you want it more spicy and to add a little bit of tang)
Cilantro (optional)
Instructions:
Roast the jalapeno over the stove top to get a char flavor and slice.
In a pot, boil the chicken and bone broth, chicken bouillon, ginger, dried seaweed and fish sauce.
Once the soup reaches a boil, loosely chop the kale and add to the broth with sliced jalapeno, and fried garlic.
Once the kale starts to soften, remove from heat and add in the pickled jalapeno and cilantro and serve!
