Homemade Coconut Ice Cream

This was awesome. You'll need an ice cream maker, I have a Cuisinart ice cream maker, that I've only used once, it was one of those wedding gifts that seemed super awesome, but you never used. I remembered I had it and thought I'd take it out for a swirl today. We had a bunch of coconut meat that needed to be eaten, so we chopped it up and threw it in. It was a great decision lol. It's light, sweet and refreshing!


Ingredients:

3 cups Coconut Milk

3/4 cups Sugar

1/2 tsp Salt

1 tbsp Vanilla or Coconut extract or 1/2 and 1/2 of both!

1/2 cup of Almond Milk (sweetened vanilla flavor is recommended)

Coconut Meat finely chopped (optional)


Instructions:

  1. In a large bowl, whisk together all the ingredients and refrigerate for at least 1 hour.

  2. Pour into the ice cream maker for 25 minutes and serve immediately.
