I'm not really big on breakfast food, but if we go out and there is Huevos Rancheros on the menu... I'm ordering it! I made these a little different, because I have tostadas that need to be eaten, but I think they came out great, my husband ate his on sourdough bread and it was just as delicious!
Ingredients:
Tostada Shells
Refried Beans
Chorizo
Eggs
Salsa
Avocado, sliced
Iceberg lettuce, shredded
Radish, sliced
Cojita Cheese
Onions, diced
Jalapeno, sliced
Cilantro, chopped
Instructions:
Add your refried beans to a small pot with a little bit of water, this will help thin out the beans, and warm it up on low heat.
Remove the Chorizo from it's casing and cook in a medium skillet until it's hot and slightly browned.
Take our tostada shell and spread the refried beans all on top, add your chorizo, salsa, lettuce, radish, cheese onions and set aside.
Cook your eggs sunny side up and place it on top of the tostada.
Top with avocado slices, jalapenos, more cheese and cilantro and enjoy!
