Kale Quinoa Salad With Blueberries and Avocado

I love this salad! It is so filling, I've never made a salad with quinoa before, and let me tell you... it's good! The blueberries and avocado bring a lot of yummy flavor to this healthy lunch.


Ingredients:

1 cup Quinoa

6 cups Kale, chopped

1 cup Blueberries

4 ounces Fetta (crumbled)

1/2 cup sliced Almonds

1 Avocado, chopped


Dressing:

1/4 cup Extra Virgin Olive Oil

1/4 cup Lemon Juice

2 tbsp Honey

1 1/2 tsp Dijon Mustard

1/4 tsp Salt

Dash of Black Pepper


Instructions:

  1. Rinse and drain the quinoa. Place quinoa in a rice cooker with 2 cups of water, wants it's done transfer to a large bowl to cool.

  2. Meanwhile, make the dressing. Whisk together all dressing ingredients in a large salad bowl.

  3. Add the kale and massage the dressing with a gloved hand.

  4. Once the quinoa is cool, add it to the bowl with the kale, along with the blueberries, feta cheese, almonds, and avocado. Toss gently and enjoy!
