These are like a Lao deviled egg haha. It translates to son-in-law eggs. I'm not sure why they call it that, but it's good! We tried not to eat so many of them while my grandma was platting it. We used turkey meat because my aunt doesn't eat pork or beef, but I think it would taste good with any protein. You can check out the video of grandma showing us how to make it below!
Ingredients:
1 dozen Eggs
1/4 lb Ground Turkey
2 tsp Fish Sauce
1 tsp MSG
1/4 tsp Ground Black Pepper
1/8 tsp Salt
Oil for frying
Instructions:
Boil the eggs in a large pot.
Form the ground turkey meat into a patty and add to the boiling water, cook for about 10 minutes.
Move the patty into a mortar and pestle.
Cut the eggs in half and place the yolk into the mortar and pestle.
Add in the fish sauce, msg, salt and black pepper and grind together.
Sprinkle the egg whites with salt, form the egg yolk mixture into balls and stuff the egg whites with them. Keep a small bowl of water next to you to help keep from sticking.
Add enough oil to cover the bottom of the skillet and fry the eggs on medium high or until the bottom starts to brown, then gently flip them in the skillet and continue frying for an additional 4-5 minutes.
Transfer to a plate, garnish with cilantro and eat plain, with jeow and/or with rice!
