I had another wonderful day learning from my grandma. She taught me how to make this dish from her tribe (Lue) in Laos and it is DELICIOUS. It's a tomato rice patty with garlic oil, fried garlic and fried chili peppers. Just the aroma itself made me drool. I'm really enjoying my time with her and soaking up all these recipes.

Ingredients:
2 cups Jasmine Rice
1 can Chicken Broth
1/4 cup Water
1 1/2 cup Tomatoes, peeled and sliced with water
2 Garlic Heads, minced
1 tsp Salt + 1/4 tbsp of Salt
1/3 cup Vegetable Oil
2 pinches MSG
1 tsp Sugar
Fried Chili Pepper

Instructions:
Add 2 cups of rice into the rice cooker with 1 can of chicken broth and 1/4 cup water.
While the rice is cooking, place your peeled and sliced tomatoes into a medium sauce pan. Add water enough to cover the tomatoes and cook on high, continuously stirring and smashing the tomatoes. Cook until the water is gone and set aside.
Remove the rice to another large mixing bowl, make sure to stir the rice to help separate it and set aside.
Fry the garlic in 1/3 cup of oil and 1 tsp of salt. Stir frequently until fragrant and golden brown.
Transfer the fried garlic into a separate container. Reserve 1/8 cup of oil in a separate bowl.
With the remaining oil in the skillet, pour in 1/2 of the rice with 2 tbsp of fried garlic and fry lightly for a few minutes and add it all back to the mixing bowl with the remaining rice.
Add in 1/4 tbsp of salt, 2 pinches of MSG and 1 tsp of sugar.
Add in the tomato and mix and knead with your hand, removing any large tomato skins.
Using the reserved cooled oil, dip your hands, roll the rice into patties, top with fried garlic and fried chili pepper and enjoy!
