Khao Piak - Lao Rice Porridge

When you are not feeling good, this is the cure. Cold, Flu, Stomach bug whatever it is this will make you feel better. It has ginger, chicken, rice, all things that will bring you back to life!


Ingredients:

1 lb of Chicken pieces (wings, drummettes, breast)

1 Yellow Onion, quartered

1 cup Rice, rinsed well and drained

8 cups of Water

2 tsp Salt

1inch Fresh Ginger peeled and sliced

1 tbsp Soy Sauce

1 tbsp Fish Sauce

2 Stalks Green Onions, chopped

1 cup Cilantro, chopped

Black Pepper to taste

Fried Garlic or Fried Chili Garlic Oil (optional)

Lime (optional for extra tang)




Instructions:

  1. In a large pot, bring 8 cups water to a boil. Add in the chicken, rice, onion and salt, stir well and cook on medium heat for 15 minutes.

  2. Add in the ginger, and continue to cook for additional 15 minutes.

  3. Add in the soy sauce, fish sauce, and bring to a boil.

  4. In a large soup bowl, add the black pepper, fried garlic or chili garlic oil with a squeeze of lime. Garnish with the green onions and cilantro and serve hot!

  5. If the rice soaks up all the broth, you can add additional water or some chicken stock and warm it back up.
