Khao Piak Sen is a Laotian hand-cut tapioca noodles. They usually are handmade but you can now buy them premade, but that isn't as fun! You can also use a pasta/noodle machine to help you cut them too. It was much easier than I thought! It usually is a chicken broth, but we made it with duck. My mom had an extra roast duck left over, so we boiled it into our broth instead. Let me tell you, this was amazing. The aroma alone would make you drool, but the extra oils from the duck just make this so comforting and flavorful. This is a MUST this winter!
Ingredients:
1 bag Rice Flour
1 bag Tapioca Flour
6 cups of boiling Water
1 Roast Duck, cut into pieces
1 Yellow Onion, halved
1 tbsp Salt
1/4 cup Fish Sauce
Additional Toppings:
1 bunch of Cilantro, chopped
2 bunches of Green Onion, chopped
2 Lemons sliced in quarters
Fried Garlic
Fried Chili Garlic
Pickled Jalapeno
Fish Sauce
Soy Sauce
Sugar
Black Pepper
Crushed Red Pepper
Instructions:
To make the noodles you can use a large mixing bowl and a wooden spoon, but to make it easier on yourself I suggest a stand mixer with the dough hook attachment. Add the rice flour (reserve some for dusting later) and the tapioca flour into the stand mixer. Add 4 cups of boiling water and start mixing. Add in the remaining water a little at a time. Continue to mix until a large ball forms, roughly 3-5 minutes.
Separate the dough into 8 equal parts. Dust your surface with the reserved rice flour and roll out your dough and cut with a sharp knife. The thickness will be up to your preference, some people like it thin, while others like them a little thick. Set the noodles aside.
To make the broth, just add your roasted duck to a large pot, cover it with water, add in the salt, fish sauce and onion and boil for about 1 hour. You can stew it longer if you want a stronger flavor.
Now assemble your bowl, I like to add all the fixings I listed above, but you can pick and choose what you want to use. Enjoy!
