I used to not like kimchi, now I LOVE it. It's even better in fried rice! This recipe takes about 15 minutes to make, so perfect for a quick meal for a busy mom. I fried an egg on top and it was amazing.

Ingredients:
2 tbsp Oil
3 cloves Garlic, finely minced
1/4 small Onion, finely diced
1/2 cup Kimchi, cut into small pieces + 1 tbsp Kimchi juice
2 cups overnight steamed White Rice
1 tbsp Soy Sauce or to taste
1/4 tsp Sesame Oil
3 dashes ground Black Pepper
1 stalk Green Onions, chopped
Fried Egg (optional)
Instructions:
Heat up oil in a large skillet. Add in the garlic and onion and saute for a couple of mins until the onions become translucent.
Add in the kimchi and continue to stir for a minute.
Break up the rice and add it to the skillet and mix thoroughly.
Add in the soy sauce, sesame oil, green onions and black pepper. Stir around a few times to make sure everything is mix and serve immediately.
I fried an egg to place on top of the fried rice and it was DELICIOUS! I recommend it. You can add some crushed red peppers and sriracha for a little extra spice.
