Lao Coconut Jello

I can eat a whole try of this, which is NOT good, but it's just so delicious! You will see this desert at any Lao party, but you might see them in different colors and in beautiful flower shapes. If you have jello or candy molds, you can pour this in them with a little bit of food coloring and come up with a beautiful display for your party. I just pour it into a pan and cut into diamonds, because they don't last long enough in my house!


Ingredients:

85 oz of Water (5 water bottles)

1 packet Agar Agar Powder

2 cups Sugar

1 tsp Salt

1 can Coconut Milk

Shredded Coconut (optional)


Instructions:

  1. Add water into a pot and boil on high heat.

  2. Combine all the ingredients and boil for 3-5 minutes, or until all the sugar completely melts.

  3. Pour into a pan and let it harden, you can leave it on the counter and put it in the fridge. If you want to have shredded young coconut in the jello, add it to the pan before you pour in the jello mixture.

  4. Once the jello has hardened you can cut and enjoy!
