Lao Yum Salad

This is probably the first salad I've ever had. It reminds me of being a little kid and feeling "grown up" because I was eating vegetables. It's full of veggies and a sweet and sour egg yolk based dressing.


Ingredients:

4 eggs (hard boiled)

1 Chicken Breast

1/2 head of Iceberg Lettuce

1 Cucumber sliced

2 tomatoes sliced

3 Green Onions

2 Carrots

1 Shallot sliced

1 bunch of Mint

1 bunch of Cilantro

1/2 cup roasted Peanuts


Dressing:

1 tbsp Fish Sauce

1 tbsp Sugar

1 Juice of Lime

Salt and Pepper to taste


Instructions:

  1. Cut up the chicken breast to thin slices, add a little bit of oil to a skillet and cook your chicken breast until fully cooked and set aside.

  2. Peel your hard boiled eggs and slice them in half length wise and remove the egg yolk and place them in a mixing bowl. Slice up the egg whites and set aside.

  3. Mash up the egg yolk in a mixing bowl with a fork, add in the fish sauce, sugar, and salt & pepper. Squeeze in the lime juice. Mix together well and adjust the flavor to your taste. You can add a little bit of water to it if you want it a little bit more liquidy.

  4. Mix in all of your veggies, drizzle the dressing and top with roasted peanuts and enjoy! You can add some garlic, ginger and shallot oil to the salad too for some extra flavor! Also feel free to add in different veggies as well (watercress, radicchio etc).
