Lemongrass Grilled Pork Chops

When I go eat Vietnamese food, I usually get Pho, Vermicelli Bowls, Bun Bo Hue or Grilled Pork Chops. It's juicy, smells amazing and taste great. The kids love it, we love it and we hope you do too!


Ingredients:

6 Pork Chops

2 tbsp Garlic minced

5 tbsp Olive Oil

6 tbsp Lemongrass minced or 4oz paste

2 tbsp Shallots minced

2 tbsp Fish sauce

2 tbsp Soy sauce

3 tbsp Sugar

Salt and Pepper to taste

1 Cucumber shredded

Cherry Tomatoes sliced

3 stalks Green Onions chopped


Nuoc Cham:

1 clove Garlic sliced

2 tbsp fresh Lime Juice

2 tbsp Sugar

6 tbsp Hot Water

2 tbsp Fish Sauce

Carrots (optional, for color)

1-2 fresh chili peppers (optional, for a bit of spiciness)


Instructions:

  1. Rinse the pork chops with water, pat dry and rub salt on each piece.

  2. In a small bowl, mix in the garlic, 4 tbsp oil, lemongrass, shallots, fish sauce, soy sauce, sugar and black pepper. Mix all the ingredients and spread all over the pork chops. Let that marinade in the fridge for at least 3 hours.

  3. For the Nuoc Cham dipping sauce, combine the garlic, lime juice, sugar, hot water, fish sauce together and stir until the sugar dissolves completely. Add in the carrots and peppers and set aside.

  4. In a small sauce pan, heat up 1 tbsp of oil and saute the green onions, approximately 1 minute and set aside.

  5. Once the pork chops are ready, grill them on the BBQ or stove top until the meat is fully cooked.

  6. Serve the pork cops with rice, and the cucumber, tomato and carrot garnish and top with the green onions. I like to pour the desired amount of sauce over the pork chops, veggies and rice, but that is up to you. You can use it for dipping instead. I hope you guys enjoy it!
