This is probably one of the most popular things I make. My girls love them, the family loves them and anyone that has tried them raves about it. If I ever have a food truck, this would ALWAYS be on the menu haha. You can BBQ them on the grill, but I usually just cook them in the oven, it keeps them extra juicy. You can use this marinade on Pork, Beef or Chicken, it taste good on everything! I hope you enjoy this recipe as much as we have.

Ingredients:
2 rack of Pork Ribs
1 4 oz. tube of Lemongrass Paste
16 Garlic Cloves
2 Shallots
1 tsp Salt
1 tbsp Sugar
2 tbsp Oyster Sauce
2 tbsp Fish Sauce
2 1/2 tbsp Soy Sauce (Golden Mountain is the best)
1/2 tbsp black pepper
1 tsp white pepper
Instructions:
Cut the rack of ribs individually and place in a large bowl.
Add the garlic cloves and shallots into a mortar and pestle or into a small blender to make sure it becomes a paste.
Add the Lemongrass, garlic and shallot paste, and the rest of the ingredients on the ribs and mix. I usually put on some gloves and really rub in all the spices. Once it's well mixed, place it into gallon zip lock bags and refrigerate at least an hour, but overnight is best.
Heat oven to 350 degrees, and place the ribs on a foil lined cooking sheet and cook for 30 minutes. Flip the ribs and cook for another 30 minutes. I will usually check on the ribs at this point, if they need a little bit of crispiness, I switch the over to broil and cook for an additional 3-5 minutes.
Remove from the oven and serve!
