We had a ton of potatoes that were goin to go bad soon, so we made WAY to much mashed potatoes for dinner. The next day I decided to make these potato cakes that were SOO GOOD! Never toss your left over potatoes again.

Ingredients:
2 cups cold Mashed Potatoes
1 cup shredded Cheese
1/2 cup Flour
6 strips Bacon
1/4 cup Green Onion
2 cloves Garlic, chopped
1 tsp Salt
1/2 tsp Pepper
2 tbsp fresh Basil, chopped
2 tbsp fresh Parsley, chopped
2 Eggs
4 tbsp Butter
Instructions:
Fry the bacon until crispy, drain and crumble into small bits. Place into a large bowl.
Fry the garlic over medium heat and then add it to the bowl with bacon with the remaining ingredients except the butter and mix well.
In a new frying pan melt 1 tbsp of butter over medium heat. Scoop up 1/4 of a cup of the potato mixture and form it into a ball. Place it in the hot pan, flattening it out until it’s about 1/2″ thick.
Fry for about 3 minutes on each side, until they are lightly golden brown.
Top with green onions, parsley and sour cream with a dash of black pepper.
