These are AMAZING! They taste like a crispy coconut flavored fortune cookie. They are not the easiest to make, you need a special lotus blossom wand and a certain technique to wiggle the dough loose.... I almost gave up but I'm not a quitter! I finally was able to get it to work and they came out great. I'm really happy with them and will start including them in my xmas goodie boxes!
Ingredients:
1 1/2 cup Rice Flour
1/2 cup All-Purpose Flour
1 cup Sugar
2 Eggs
1 can Coconut Milk
1/4 tsp Salt
Black Sesame (optional)
Vegetable Oil for frying
Instructions:
In a medium bowl, whisk together the sugar, eggs, milk and salt.
Add in the rice flour and all-purpose flour and mix until smooth.
Set up a sheet pan with a cooling rack on top. Take foil and form 2 balls so you can form your flowers.
In a pot, heat up enough oil to cover your mold. Once the oil is hot, reduce heat to medium.
Dip the mold into the oil for 5 secs, remove and dip the mold 1/3 of the way into your batter, quickly remove and dip into the oil wiggling until the batter comes loose.
Fry until golden brown on both sides, it takes less than 30 secs so please keep an eye on your cookie.
Remove the cookie with tongs and lay on top of one of the foil balls and gently press on the sides to make your blossom, should be a nice semi circle. This will only take 15 secs to harden, then set it aside to make room for more cookies!
