Mahi Mahi with Mango Salsa

Totally loved this! The grilled Mahi Mahi was so good, not fishy at all, and the Mango Salsa has a kick to it. This whole meal took maybe 20 minutes, the longest part being waiting for the rice to cook! We added quinoa to the rice and it was delicious. What a healthy and quick meal!


Ingredients:

4 Mahi Mahi Fillets

2 tbsp Extra Virgin Olive Oil

1 tbsp Cumin

1/2 tsp Onion Powder

1 tsp Chili Powder

1/4 tsp Sea Salt


Mango Salsa:

1/2 cup Mango, diced

1/3 cup Tomato, diced

1/4 cup Red Onion, finely chopped

1/4 cup Cucumber, peeled and diced

Cilantro, handful finely chopped

1 tbsp Lime Juice

1 Jalapeño, minced

Sea Salt, to taste


Instructions:

  1. I bought a stovetop grilling pan that I am totally in love with, you can do it on the stove top or out on the grill. If you prefer stovetop, lightly spray the pan with olive oil and let it heat up on medium heat when you are ready.

  2. Drizzle olive oil on the mahi mahi fillets and rub to coat.

  3. Mix together cumin, chili powder, onion powder, and sea salt. Rub seasonings over each fillet and set aside.

  4. Combine ingredients for the salsa in a small bowl, mix well and refrigerate until serving.

  5. Place mahi mahi on grill. Cook 3-4 minutes, then gently turn over and cook 3-4 minutes longer.

  6. Serve mahi mahi with salsa and a side of rice and enjoy!
