Sticking with the Thai theme from yesterdays post... this is a traditional Thai dessert. I can eat it all day. Make sure you are using ripe mangoes, it doesn't taste the same unless it's sweet!
Ingredients:
2 Fresh Mangoes
1 cup Sweet Rice
1 cup Coconut Milk
1 tbsp Coconut Milk
1/4 cup Sugar
1/4 tsp Salt
1/2 tsp Corn Starch
Sesame Seeds for garnish
Instructions:
Soak the sweet rice overnight. Drain water and use a rice steamer to steam for 20 minutes. I use a traditional bamboo basket steamer, I cook the rice for 15 minutes on one side, flip the rice over and steam for an additional 5 minutes, remove and let cool.
Bring 1 cup of the coconut milk, sugar and salt to a boil. Once it reaches a boil, separate half of the sauce into a small bowl and set aside.
Combine the 1 tbsp of coconut milk and corn starch in a small bowl, then add to the pot to thicken the sweet coconut sauce. Boil until the sauce thickens (roughly 3 minutes). Remove from the heat and set aside.
Once the rice is done, add the non-thickened sweet coconut sauce to the rice and mix, set aside and let cool.
Once cooled, plate the rice and sliced mangoes, drizzle the thickened sweet coconut sauce onto the rice. Garnish with the sesame seeds and enjoy!
