This little twist on a pasta salad was a nice treat. I wanted to try something a little different than the usual pasta salad. I love feta cheese, it's about the only cheese I like in salads. I added tomatoes from our garden which made it even more satisfying. It's a great summer side to any BBQ!

Ingredients:
12 oz dry Bow Tie Pasta
1 English Cucumber, diced
1 pint Cherry Tomatoes, halved
2/3 cup sliced Kalamata Olives
4 oz crumbled Feta Cheese
Half of a Red Onion, thinly sliced
1/4 cup Extra Virgin Olive Oil
3 tbsp Red Wine Vinegar
1 tbsp freshly-squeezed Lemon Juice
2 tps Dried Oregano, minced
1 tsp Honey
2 Garlic cloves, minced
1/4 tsp Black Pepper
1/4 tsp Salt
Desired amount of Red Pepper Flakes
Instructions:
Cook the bow tie pasta according to package. Run under cold water, drain and set aside in a large serving bowl.
Toss in the cucumbers, olives, tomatoes, red onions.
Make the dressing with the EVOO, red wine vinegar, lemon juice, oregano, honey garlic, salt, pepper and red pepper flakes. Mix it all together and pour it on top of the pasta salad. Mix well and top with the feta cheese.
